چکیده
The present study was conducted to assess the suitability of blends of two sweet potato (creamand yellowflesh) varieties and maize flours in the preparation of crunchy snacks. Each of the sweet potato varieties was prepared into flour and separately blended with 0, 30 and 50% of maize flour. The blends were evaluated for proximate composition, mineral content, vitamin content, anti-nutrient factors and functional properties. Baked crunchy snacks were prepared from each of the blends and evaluated for physical and organoleptic properties. The results of proximate analysis showed that crude protein (3.40 6.57%) was significantly different between the two varieties of sweet potato used and it increased with addition of maize flour to the two varieties. The β-carotene value (345 370 μg/100 g) was highest in 100 yellow-flesh sweet potato which slightly decreased with addition of maize flour. The vitamin c content (13.417.3 mg/100 g) was also highest for 100% yellow-flesh sweet potato. The cream-flesh sweet potato contained higher amount of phytates (16.0 mg/100 g) but lower amounts of tannins (8.66 mg/100 g) and oxalates 7.0 mg/100 g) compared with the yellow-flesh varieties. The tannins, phytates and oxalates values decreased with addition of maize flour to both varieties of the sweet potato used. The bulk density values (0.523 0.683 g/cm3), water absorption capacity (123 143%) and oil absorption capacity (13.3 15.3%) were significantly (p < 0.05) different among the samples. The specific height was highest for 100% yellow flesh sweet potato and it decreased with addition of maize flour. The sensory evaluation revealed that all the samples were scored within the acceptable attribute limits except the sample from 100 cream-flesh sweet potato which was scored lowest in all attributes.

Study of Ulcer Protective Effect of Ipomea batatas (L.) Dietary Tuberous Roots (Sweet Potato)
Peptic ulcer is one of the most prevalent gastrointestinal disorder, commonly occurs in developed countries. The present work was carried out to evaluate antiulcer effect of Ipomoea batatas (L) dietary tuberous roots. The Ethanolic extract of Ipomoea batatas (EEIB) was prepared by dynamic maceration for 7 days at room temperature using 70% ethanol (V/V). The antiulcer activity was evaluated...
متن کاملEvaluation of β-amylase Activity of Sweet Potato (Ipomoea batatas) Cultivated in Iran
Besides the high starch content, sweet potato contains endogenous amylases where the two Predominants are - and β-amylases. Sweet potato is thought to be a promising source of β -amylase since β -amylase is one of the major protein in the tubers. This investigation has focused on the properties of β amylase from white-flesh sweet potato that has been grown in Iran as a potential source for indu...

Three composite flours were prepared by combining rice flour, potato starch, sweet potato flour, soybean flour, and xanthan gum in the ratio of 30: 15: 50: 4.5: 0.5; 30: 15: 45: 9.5: 0.5; and 30: 15: 40: 14.5: 0.5, were analysed for selected physical, chemical, functional, and rheological properties. Fat, protein, ash, and crude fibre content were found to increase with increase in the ratio of...
متن کاملViscoelastic properties of sweet potato complementary porridges as influenced by endogenous amylases
Sweet potato (Ipomoea batatas L.) roots contain amylolytic enzymes, which hydrolyze starch thus having the potential to affect the viscosity of sweet potato porridges provided the appropriate working conditions for the enzymes are attained. In this study, the effect of sweet potato variety, postharvest handling conditions, freshly harvested and room/ambient stored roots (3 weeks), and slurry so...
